Dessert season is upon us and I don't know about you, but the plethora of treat options at the dessert table can be overwhelming.
No longer are the days when you have to choose which dessert to divulge in. You can ignore that inner voice battling over cheesecake vs. chocolate chip cookies. I don't know about you, but I usually end up eating both. Enjoying every bite of course.
THESE crazy Butterfinger, cheesecake, cookie dough bars were a Pinterest find and I immediately fell in love. This was a different kind of Pinterest find though, it was special. Unlike majority of my other pins that sit on my boards and collect dust, I knew this one was a keeper.
The recipe is very simple to follow and once you have all of the layers made, all is left is the assembly. My assembly got off to a bit of a rough start. Please excuse my partly shattered Butterfinger bars. I guess my grocery transportation skills need some improvement.
I made up for it with a creamy layer of cheesecake though. I am telling you, these layer bars get better with every step! Any recipe that calls for the final step of crumbling raw cookie dough and chocolate chips is a winner in my mind.
In case you are looking to take these Butterfinger cookie cheesecake bars to the next level, you can add crumbled bacon on top. This idea was courtesy of my boyfriend, who just loves to add bacon to anything and everything. Regardless of his bacon addiction, the sweet and salty combo worked perfectly. If you are not a bacon lover, you can simply skip that step.
Butterfinger Cookie Dough Cheesecake Bars
Chocolate chip cookie dough layer:
1/2 cup melted butter
1/2 cup brown sugar
1/2 teaspoon vanilla
3/4 cup flour plus 2 tablespoons
1 cup mini chocolate chips plus 1/2 cup for top
5 Butterfingers, king size
8oz. cream cheese, room temperature
1/3 cup sugar
1 teaspoon vanilla
Create a sling by lining a 9x5 baking pan with foil so that there is a one inch overhang on each side. Pre heat oven to 375 degrees.
To make the chocolate chip cookie dough layer:
Melt butter and let cool to warm. Add in brown sugar and mix. Then add in egg and vanilla and combine. Add in flour and fold in to combine. Fold in 1 cup of mini chocolate chips and set aside.
To make the cheesecake layer:
Add all ingredients to a bowl and beat until blended. Set aside.
To assemble the bars:
Pour 3/4 of the cookie dough mixture into the pan. Place Butterfinger bars side-by-side on top of the cookie dough. Then pour the cheesecake layer on top of the Butterfingers. Crumble the remaining cookie dough mixture on top along with the 1/2 cup of mini chocolate chips.
Bake for 30-40 minutes. Remove from the oven, top with Bacon if you would like, and set on wire rack to cool. To make cutting the bars easier, it is recommended that you refrigerate them first.
