I have been on a lemon dessert kick lately. Could be from the long awaited Spring weather reminding me of how lovely citrus fruits are, especially in desserts. Or it could be from the idea that lemon desserts tend to make me feel better about eating them.
They have fruit in them, therefore it is healthy right?
Healthy or not, these lemon poppy seed cookies are a must try fresh and tasty treat!
These cookies from AllRecipes caught my eye with their vibrant color lightly dusted in powder sugar.
I couldn't help but think of the meyer lemon poppy seed muffins I made and how perfect they would be in a cookie form.
These light, fluffy cookies filled with bright citrus flavors and sweetened from a dusting of powdered sugar are to die for!
My favorite part about this lemon poppy seed cookie recipe is how easy and quick they are to prepare. Simple and flavorful ingredients take only a few minutes to mix together; the longest part is waiting for the oven to preheat.
Simple Lemon Poppy Seed Cookies
Recipe by All Recipes
1 Package of lemon cake mix
1/3 c. Vegetable Oil
1 tsp Lemon extract
1-2 tbsp Poppy seeds (depends on poppy seed preference, I used 1tbsp)
1/3 c. Confectioners sugar
Preheat oven to 375 degrees F
In a large bowl, combine cake mix, eggs, vegetable oil and lemon extract. Stir in the poppy seeds.
Place the confectioners sugar in a smaller bowl. Then drop about a teaspoon size of the dough (you can make them bigger if you'd like) into the confectioners sugar. Roll the dough around, forming a ball, until it is covered in sugar.
*Keep in mind the dough is somewhat sticky, which makes it difficult to drop the dough into the sugar. Once it is in the sugar, the rolling process will get much easier :)
Once covered in sugar, place them on an ungreased baking sheet.
Bake for 6-9 minutes or until the bottoms are golden brown. If you made your cookies larger than a teaspoon size, you will have to adjust the baking time.
