The local farm stand had these beautiful figs and I couldn't help but be drawn to them. Cooking with figs is fairly new to me and I wanted to find a recipe that was unique and exciting. Mission accomplished.

Summer Caprese Salad

Caprese salad has to be my favorite summer time dish.

Basil and tomatoes are ripe and bountiful late in the summer and they pair wonderfully with mozzarella. I happened to be catching up on some episodes of the Pioneer Woman, when she made this dish for her family 4th of July party. I fell in love with the idea of layering the tomato, basil, and mozzarella. Not to mention it has to be the quickest side dish to prepare for a summer gathering.

Strawberry "Cheesecake" Dairy Free!

When faced with the task to make a gluten free and dairy free dessert, I have to admit that I felt my hands were tied at first. A dessert without dairy, is this going to taste good?

I searched the creative pins of pinterest and came upon this strawberry cream pie. The world of dairy free baking is a mystery to me, but I am thrilled I tested out this recipe. It is so thick and creamy, and the consistency reminds me of a traditional cheesecake.
